Dirt. More specifically, it's an ... earthy taste, I guess. Different areas have different peat composition, which adds distinction to each distilleries flavor. So, kind of like Fat Tire, in a way?On the rocks, usually. Why does water help bring the flavors out? I've often heard that, but never really understood it.

Ah, you're a one-shot kinda guy. I find that mildly surprising. Hardly. It's just kinda hard (hehe, hard) to drink the same drink twice. Pfft, who's the dirty one here??? There's room for everybody! I'm not up to speed on the chemistry, myself, but my understanding is that several of the flavors involved are water-soluble, and become more... um.. volatile? when a little water is added.
I use room tempurature water, just a spoonfull or two.

Well, shit. Looks like I'm headed downtown tonight to check out a few different Scotches. Are there any beers that compliment them so they'll be easier to sip? Or is that blasphemous?

A bit blasphemous, but no big deal. You'll probably want something heavier on the malt without overpowering hops. A Scotch ale or bock would work well. A sweeter Oktoberfest wouldn't be bad either. (Hacker-Pshcorr makes a sweet Oktoberfest. They consider it a Marzen, but Marzens are typically less malty.) But I usually don't drink beer with my Scotch, so I don't know for sure.

Don't look at me for this one. What I know about scotch, well I have posted almost everything I know about scotch. OH, it's spelled Whisky instead of Whiskey. NOW I have posted everything I know about scotch. I would guess a lager or some sort so as not to overpower it. Maybe a light ale? Do you have access to scottish beer? This totally goes against what I just said, but Wee Heavy would probably be good or maybe straight Bellhaven? Otherwise go British with maybe Fullers 1845 or London Pride (but probably not a bitter.) Newcastle or Bass in a pinch. Really I am just guessing.

We just got Fat Tire here recently, and I didn't think it was that great. People were raving over it, and I just don't see the particular attraction. I guess it just wasn't thick enough for me (that's what she said!); I prefer to be able to chew my beer. Mmm...Left Hand Imperial Stout. Rogue's is excellent as well. Or anything bottle-fermented, like many of Unibroue's fine offerings.

Fat Tire was the first non Bud/Coors/Miller Light I ever had, so I'm still a bit partial to it. It's not one of my favorites, but it certainly has a special place in my heart.
I like all the suggestions, perhaps I'll try one of each!

Oh, and I tend to like a smooth Belgian(or -style) white beer to accompany the harder stuff, or even between tasting stouts. It tends to be on the refreshing side, and I feel like it cleanses the palate a bit. But I know jack-shit about scotch, except for the whisky-not-whiskey bit, and that seems to have been covered.

Not a beer or whisky drinker so I'm no use to you. I like my Mount Gay rum and ginger beer (proper fiery ginger beer not that weak assed stuff you get in supermarkets).

Speaking of Irish whiskey, what's good? I know I like Jameson, but I have a feeling it might be in the over-priced category. I like Bushmills a lot. It is apperantly hard to get much more than Jameson or Bushmills out here in the states (and one other that I am forgetting the name or right now). But according to the No Reservations episode on Ireland there are hundreds of distilleries in Ireland. I guess most don't get exported? Interestingly, while I can't stand bourbon below room temp, I prefer my Irish whiskey with an ice cube or two.
